With the recent surge in the price of tomatoes due to the Tuta absoluta pest destroying tomato farms in Nigeria, Nigerians have had to buy tomatoes at three times the price they previously bought them. This is a really big problem because there is hardly a Nigerian meal that won’t involve the use of tomatoes.
The good news is that you do not have to depend solely on stew and tomato sauce for your meals. Chicken sauce is a great substitute. It is healthy, delicious and easy to prepare. Here’s how to make chicken sauce
Ingredients
Chicken
Vegetable oil
Spring onions
Green peas
Fresh tomatoes (optional)
Carrots
Cabbage
Corn flour
Green pepper
Salt
Seasoning cubes
Curry
Cameroon pepper
Procedure
- Wash and chop all the vegetables
- Wash and cut the chicken into desired size. You can also have cube shaped chopped chicken. Place in a pot, add chopped spring onions, salt, seasoning cubes, curry and Cameroon pepper.
- Add water to cover the contents of the pot and start cooking.
- When done, add more water to reach the same level as the content in the pot.
- When boiled, add the chopped tomatoes and the vegetable oil. Cover and cook for 15 minutes.
- Add the carrots and cook for 5 minutes.
- Add chopped peppers, green peas and cabbage. Stir, cover and allow to cook for 5 minutes on high heat. Add salt to taste and the sauce is ready to be served.
- Dissolve 2 teaspoons of corn flour in cold water and add to thicken sauce as desired.
- Allow to cook for another 2 minutes before putting out the flame.
- Serve with boiled white rice, spaghetti, yam or potatoes.
